Description: Cigar shape, yellow skin, waxy flesh Use for: Baking, boiling, salads

Nicola

Description: Oblong shape, rich yellow skin, yellow buttery flesh Use for: Salads, baking, boiling, gnocchi

Ranger Russet “The Ripper Chipper”

Description: Large, elongated shape, white flesh, deep eyes
Use for: Baking, roasting. Australia’s major variety for French fries and wedges

Exton

Description: Creamy white skin, white flesh Use for: Frying, boiling, baking

Otway Red

Description: Oval shape, red smooth skin, cream flesh
Use for: Mashing, roasting, frying
